MONAKA is a sweet bean jam wrapped with thin rice cake wafers. The wafers are made by pounding rice, making it thin, and baking it in a mold.A monaka with white Beniimo kneaded into the white bean paste. Beniimo is a type of sweet potato. The inside of the potato is reddish-purple.The reddish-purple pigment is anthocyanin, a type of polyphenol.
